The whole top vibrates, no matter which string is being played. In my experience, tops of two different woods have a sound that is somewhere between either wood by itself. That can be good or bad.
It's been done; engalmann and sitka, I believe, and probably other combinations. It does not change the sound of any specific strings relative to the others.
