Nothing likely has more arpeggios in it than Bach's Prelude in C, BWV 846 from the Well-Tempered Klavier.
I first arranged it for mandola in the original key, but here is a mandolin...
Also have a look at Victor's "Aprčs de Bériot", which is written as a chord melody but intended to be played arpeggiated.
