I was in Texas in June, and The old time jam at the Dallas Heritage Village was active. Not sure about now, but you can google it. Most of the other jams were taking a break due to COVID.
The old time world has a few that might be considered standards: Whiskey Before Breakfast, Cherokee Shuffle, Angelina Baker, and Saint Anne's Reel. (IMHO)

You could probably get by with a standard 5-string "no-knot" tailpiece. Just put both strings of each pair on a single post. The bridge will take care of the spacing.
