If you want to hear Clint sing, ya gotta watch Paint Your Wagon ;-)

Thanks, Mark ... there's a few on your list I haven't seen.
The Tom Petty doc is one of the finest crafted documentaries I've seen (I'm a fly on the wall of the doc film business). The film turned me into a fan; I've watched it many times. What a stand up lad he is.
The Winding Stream is also great; am friends with the editor and know the filmmaker. It was fun to watch the filmmaking process on this one.
Standing in the Shadows of Motown is probably my all time favorite. I always cry.
The Levon Helm doc was very revealing. I had no idea what went on in that group.
Couldn't stand the Eagles documentary. It was very poorly crafted and hard to watch.
Gimme Shelter is another all time favorite. The filmmakers really nailed the backstory.
These aren't documentaries, but I really enjoyed: CBGB, Songcatcher and Performance.
You Tube has some great documentaries that are genre specific and not well known.
Just visiting.
1923 Gibson A jr Paddlehead mandolin
Newish Muddy M-4 Mandolin
New Deering Goodtime Special open back 17 Fret Tenor Banjo
Cisco Pike - featuring the music of Kris Kristofferson's album The Silver-Tongued Devil and I...
Not a documentary, but someone has mentioned Breaking Bad. Anyone who has not seen this has missed what is generally considered the greatest achievement of American television.
If we start listing all our favorites in every category this thread'll go on forever ... I'll try to resist that temptation.
Okay then, back to flicks that feature music prominently and especially documentaries as asked on the OP:
Across the Universe (Beatles fantasy musical)
I'm Not There (best Dylan non-doc; call it a fantasy documentary if you like)
The Fabulous Stains ('80s punk grrl road movie)
Nashville (the Altman movie)
Nashville (the recent series; a mixed bag, not as much industry focus as I'd have preferred)
Treme (series; not doc but plenty of real-life music and music industry atmosphere)
Sweet and Lowdown (Woody Allen's take on '20s Django jazz)
Bird (classic biopic directed by Clint Eastwood, starring Forrest Whitaker as Charlie Parker)
Round Midnight (another classic jazz pic loosely based on real people)
Songwriter (Willie Nelson, Kris Kristofferson; lots of inside-industry details)
The Rose (just rewatched this recently; I had totally forgotten that Harry Dean Stanton plays a brief role as a bluegrass musician)
Actual documentaries as per request:
Anvil (has-been middle-aged metalhead band on the road in Europe)
Last Days Here (life of Bobby Liebling, former lead of Pentagram and his struggles w/midlife issues)
The Devil and Daniel Johnston (outsider music)
Scott Walker: 30th Century Man (outsider music)
Be Here to Love Me: Townes Van Zandt (TvZ's final struggles; I think you can see a pattern here!)
Jazz parts I-IX (Ken Burns)
Patti Smith: Dream of Life
The Swell Season (Glen Hansard and Maria Irglova; lots of backstage stuff)
The Soloist (dramatic portrayal of a real-life homeless cellist who gets rediscovered)
You're Gonna Miss Me: The Roky Erickson Story
Greetings from Tim Buckley (forgot whether this was a doc or a bio-pic)
On the Rumba River: Wendo Kolosoy (modern era Congo musicians)
Youssou N'Dour: I Bring What I Love
I'll Sing For You: Boubacar Traore
If some of these have already been mentioned consider it an additional vote.
Oh my goodness.
Well this might be relevant.

I only noticed last night that all the TED talks that were on my list had disappeared. A quick Google search revealed they got pulled in March. Wish I'd managed to watch a few more of them.
