It's a common thing to have necks shaved, you can talk to a luthier about it. It's a lot tricker on a mandolin than a violin, string tension, trussrod cavity and all that.
V-shaped on my Kentucky means only to 6th fret, or so, where it becomes more baseball bat (Telecaster) shaped, so you're not talking a lot of material.
