    Default What's on the grill for the 4th?

    I guess this is for those of us in the US of A!

    What are you barbecuing today?

    I've got swordfish kebob, friends are bringing pork ribs, and we'll also grill up sweet potato slices, onion, bell pepper, and zucchini rounds.

    Plus some sides, like salads.

    I'm curious about your 4th of July grilling, since many of us fire up the backyard BBQ today.

    Nothing today. Saturday instead; crabs, clams, corn, followed by watermelon and ice cream.

    Nuthin' fancy, just hot dogs on the grill, BBQ beans, homemade coleslaw, chips. We're usually low-key on the 4th. No family in town, staying at home to avoid the tourist traffic (this small town goes a little nuts on the 4th). We invited one friend over for the meal, who would be otherwise be alone at home today.

    The major food focus is aimed more at the weekend. Tonight I'll start a a fake-BBQ pork shoulder, cooked sous vide for 21 hours with "Liquid smoke" for the fake part. Then a few hours in the oven to finish off the bark. That will end up as pulled pork sandwiches tomorrow, and then Brunswick Stew over the weekend.

    Might get in a little mandolin playing if I can remember to lick the grease off my fingers...

    No need for a grill here in VA today, just put your grill item of choice out on the driveway and it'll cook right up!

    Ribs - on Saturday. Invited friends over to play Hand and Foot - with partners. But when I went over the number of people we'd asked, I came up with 7. Now I understand why my mandolin teacher says I need to work on my counting.

    Family is divided so for the two of us it was sweet Italian sausages.
    Burrito bar for Friday.
    Peruvian chicken with green sauce (Steven Raichlen) for Saturday or Sunday.

    Skirt steak with chimichurri, corn on the cob with chili and lime. Green beans, green salad and southwest corn pudding with rum sauce are what's not on the grill. Oh, and gin & tonics. The heat index is above 100 today, so they're medicinal.

    Today my wife and I are having bacon and tomato sandwiches and corn on the cob. Tomorrow the family is coming for homegrown grilled steaks.

    I had prime rib, closed oven technique, from cows I finish on my farm. Salad from my veggies. Btw, I’m an organic farmer.

    Looks like we need a mandolins and BBQ section.

    I got a Kamado Joe last year and I love this thing. It can do most anything. I haven't touched the gas grill since. I've smoked low and slow, seared hot and fast, stewed, griddled, pizza'd, and the regular steak, dog, and burger flip. Never dries anything out. Best turkey ever. Best Salmon ever and I've done it many ways- slow and smoked; and seared and fast (2zone cooking one grate low directly over coals to sear and one high "indirect" or convection to finish).

    Its really not that much more trouble once you get it figured out. Just the right amount of tinkering to make it fun. It does take about 20 minutes extra to heat up but I enjoy that too.

    I was hesitant and researched extensively and went back and forth between pellet smokers, indirect smokers, fancy gas smokers -looked into them all. They all have their place but if you're going to get only one, I'd say this is the one. And I think the Kamado Joe is a bit of an improvement over the Big Green Egg and a little cheaper too. As you can tell, I'm hooked.
    No matter where I go, there I am...Unless I'm running a little late.

    I’m late to this party but yesterday I played a round of afternoon golf, had a double cheeseburger from the grill washed down with a couple of beverages, and then me and the mandolin watched fireworks from the front porch. I never eat like that and it was soooo good!
