    Hope its not to late for pictures! My ribs from the 4th and the pepper jack stuffed meat load from the 3rd. So on the 4th ribs and leftovers. There is also potatoes and onions with a stick of butter on the grill.Click image for larger version.

    I’ve done probably fifty hogs over the years, they are fun and a Grand reason for a picking party! These days, I’m more inclined to use my WSM (Weber Smokey Mountain) or the kettles or gasser (if pressed for space) never built a hog roaster, too much work for something I might use twice a year, I rent one from the packing house where I get the hog bot need to super clean it when I return it even!
    Today I will be using up past delights from the freezer in a burrito bar with my family! Machaca, shredded chicken, frijoles refritos, yellow rice, hatch chili salsa, Cowboy caviar, organic chips, several beverages!
    Might need to restock the beverages now that I think about it.

    Whole hog is a lotta work! I've only been to one hog pickin' party, many years ago in Miami. It was done Cuban style (or some variant), with a pit dug in a friend's back yard. Coals lit and spread, then I think I remember some banana tree leaves as the next layer. Then the hog brushed with marinade, tossed in the pit with more leaves to cover, and buried in the ground to slow cook. Started in the morning, was ready to dig up and eat by evening for the party.

    It was wonderful, but an all day project and I'm glad I didn't have to be there the next day for the cleanup.

    It is indeed a lot of work. Fortunately, I didn't have to do most of it!

    It’s a lot of work to be sure but, MOST of the time is simply spent waiting! The waiting time allows for ample music playing time. My wedding feast pig was an overnighter, the guy I got the hog from was also a dairy farmer who had fed the pig for its last two weeks on...chocolate milk. That was the sweetest pork I’ve ever eaten! Music started playing and didn’t end until my bride called out that she was not going to bed without her new husband! It was one helluva party!

    Tomorrow will be Steven Raichlen’s Peruvian rotisserie chicken!
